Mix, Fry, Soak and Eat - Gulab Jamun Recipe

All through my childhood, eating was just another job. No matter whether I like or not, I eat when I am hungry or when my parents force me to. As ages went by food has become my ‘friend in need’. And I continued to eat food without much investigation about “how it is made”, “what ingredients are used”, etc. But once I started to cook I became curious about the intricacies of food making. No wonder, I love to spend time on food and their making. One such sweet delicacy that I always wanted to experiment was the ‘Gulab Jamuns”. I have a sweet-tooth but there are only few Indian sweets that I love eating. One among them is Jamuns.

With so much research about jamuns I finally settled down to make them from scratch without using the ready mix. I made use of Khoya to make the tiny round of joy (jamuns) and sugar-free natura made it edible for people who are health conscious as well. Let's get into the making!

What all you need to make them?
  • Unsweetened Khoya - 500 g
  • All Purpose Flour (Maida) – 150-200 g
  • Cooking Soda/Baking Soda - 1 pinch
  • Water – 50 ml
  • Oil - Required to fry the Jamuns
  • Sugar free Natura (http://sugarfree-india.com/) – 1/2 cup
  • Cardamom Powder - 1/2 Tsp

How to make the Jamuns?
  • Mix together the khoya and all-purpose flour. Knead them well in a flat surface
  • Sprinkle water gradually and mix them well. Add the baking/cooking soda
  • Knead them well so all the ingredients are mixed together evenly
  • Make them into small round balls
  • Simultaneously heat the oil in low flame. Fry the jamuns in the oil. Keep stirring the oil while frying them so the oil doesn't get heated quickly. The jamuns need to cook all the way inside.

How to make the Sugar Syrup?
  • Boil water in a bowl, add sugar free natura and let the sugar dissolve
  • For 2 cups of water add 1/2 cup of sugar-free natura (in case of regular sugar, add 1 cup). Add the cardamom powder.
  • Look for one-string consistency and turn off the stove.
 
Add Jamuns to Sugar Syrup
The Gulab Jamuns - Add the fried jamuns into the sugar (free natura) syrup. Let them soak for an hour.


The soft spongy and hot gulab jamuns are ready!! Grab some vanilla ice-cream and enjoy the sweet delight.
